Here the grapes are harvested in October and, placed by hand in small baskets, arrive intact in the cellar, where they are destemmed and collected in fermenters. Alcoholic fermentation lasts about 7\/8 days, with capillary maceration and several replacements. After malolactic fermentation, the wine goes into Slavonian oak barrels, where it matures for at least two years. Before release, the Barolo rests for another year in numbered bottles, stored in a special temperature-controlled room.\u003c\/p\u003e\r\n\u003cp\u003eBrezza's Barolo \"Cannubi\" stands out for its great elegance, which has earned it awards and recognition.
