Alain Cavailles er en vinproducent, der driver Domaine Moulin d'Alon på en håndværksmæssig måde. Ejendommen ligger nær Magris, syd for Carcassonne, i Aude-afdelingen, inden for den franske region Occitanien. Ejendommen blev grundlagt i 1999 og producerer et udvalg af vine med typisk territorial karakter, som omfatter: Blanquette de Limoux, Crémant de Limoux, stille hvide og røde vine. Alain er en atypisk vinproducent. Han har ikke nogen familiære traditioner inden for vinavl. Da han begyndte sit eventyr, vidste han ikke, hvordan man beskærer vinmarken, kører en traktor, og slet ikke hvordan man vinificerer. Han besluttede simpelthen at vende tilbage til sine forfædres land, Limoux, for at starte et nyt liv næsten fra bunden, ved at udfordre sig selv og kun stole på sin passion og sin vedholdenhed.
Han valgte at dyrke vinmarkerne i den høje dal af Aude, i hjertet af Autan-området. Jorden er leret og kalkholdig, meget velegnet til vinavl. Klimaet i Limoux-området er meget specielt og påvirket af tre forskellige klimatiske systemer: mediterranean, atlantic and pyrenean, which create unique conditions, with cool temperatures, constant ventilation, and the presence of good temperature fluctuations, which favor the ripening of grapes with intense aromas, but with a high acidity base. The vineyards are managed according to the principles of organic farming, with the utmost respect for nature and using only sulfur and copper for treatments. The vine is thus stimulated to find its natural balance and to develop its resilience within an ecosystem characterized by a rich biodiversity of flora and fauna. Even the soils, which do not know herbicides or chemical fertilizers, show greater vitality and absolutely natural fertility.
The soils are worked and plowed gently to avoid damaging the microbiotic life. Fertilization is carried out using pomace, the remains of winter pruning, and the mowing of spontaneously growing herbs in the rows. The work in the vineyard during the year is carried out manually, and even the harvest is done with the manual harvest of the bunches in small crates to safeguard the integrity of the grapes. Following the same philosophy that guides all the work in the vineyard, even in the cellar Alain has a very respectful approach to the raw material. The vinifications take place in the most natural way possible, trying to intervene only as minimally as necessary. The final goal is to create healthy, honest, and genuine wines, that can bring the authentic face of the terroir into the glass.
